Dan has this weird habit of falling in love with random bizarre songs on KRFC then singing them for days on end (usually to his adoring audience, the kiddos). So the musical selection from this week is "Homegrown Tomatoes" by Guy Clark.
And in honor I am posting a new recipe that we adore.
Homegrown Tomato Sandwich
1/2 C olive oil
4 cloves garlic crushed
1 small dried red chili pepper
1/2 tsp pepper
1/4 tsp salt
4 acidic type tomatoes, sliced 1/3 inch thick
8 thick slices of sourdough or focaccia bread
2 T butter
3 ounces Fontina cheese
16 fresh basil leaves
Combine oil, garlic, chili pepper, pepper and salt in shallow dish. Marinate tomatoes in the mix at room temperature for at least 6 hours.
Brush one side of bread with some of the marinade. Place cheese on the oiled side of half of the bread. Melt the butter in a frying pan large enough to hold all of the sandwiches. Brown both sides until cheese melts. Tuck tomatoes slices and basil leaves into each sandwich. ( I like my tomatoes warmed so I grilled with tomatoes and basil inside.)
Simple yet incredible.
